BAGEL & BAGEL

In 1985, serial entrepreneur Gail Lozoff was among the first to open what is now known as Fast Casual Dining with her bagel-concept restaurant, Bagel Bros. The concept served healthier, trend-forward food in clean, well-designed environments and was unique at the time, as there were no casual restaurant chains other than fast-food and full-service venues, such as Applebee's.

EINSTEIN BROS. BAGELS

The early brand development of Einstein Bros. Bagels is a fascinating story of regional scaling, strategic design partnership, and corporate consolidation that helped define the modern fast-casual dining experience. The creation of the brand relies heavily on the work of entrepreneur Gail Lozoff and the creative firm Willoughby Design. The original branding was deeply personal. The caricatures of the two men featured in the early Einstein Bros. logo were actually modeled after Gail Lozoff’s husband (Richard) and her brother-in-law.

SPIN! PIZZA

We designed 3 new restaurant concepts for Gail over the next thirty two years; Bagel and Bagel, Einstein Bros. Bagels and Spin! Pizza. This intensive branding experience led to our long relationship designing environmental and seasonal campaigns for Panera Bread.
